Ratatouille is often served as a side dish, but for me, cooked like this, it’s the star of the show. Roasting the ingredients in one pan not only makes this a quick and easy dish to make but gives a depth of flavour that’s very rich and satisfying. Serving it with quinoa (complete in all […]
Specially for British Pie Week 2015 I rustled up this beauty again. You can add faux meat pieces if you like or stick with the mushrooms and try different varieties too. The rich flavourful gravy makes this a hearty crowd pleaser.Chantal x
“These muffins are really simple to make and you could add different fruits and flavourings to the basic recipe.”Chantal x

When butternut squash first became fashionable I just couldn’t understand what all the fuss was about – I didn’t really like its sweet taste. But knowing it was good for me (being extremely rich in vitamins and flavonoids etc) I persevered and devised this soup. I’m so glad I did because now it’s one of […]
Pancakes with Spiced Peaches
vlaweb | February 14, 2015
I’ve topped my pancakes with lightly spiced peaches and oodles of freshly squeezed lemon juice. Yum!Tomi

These pancakes are something special. I love these things so much that in the week I developed the recipe I made them no fewer than four times!Emily *recipe first featured on Veganuary
Fluffy American-style Pancakes
vlaweb | February 14, 2015
Pancakes were my all-time favourite breakfast before I became Vegan – and they still are! It was a total revelation that you can make them egg-free and dairy-free. I think they are even more delicious!!Chantal x

“This is the perfect recipe to make the night before as a packed lunch for work, and still tastes delicious cold from the fridge several days later.”Michael & Julia

“Suya is a popular street food in Nigeria – a shish kebab usually prepared using strips of skewered beef coated with suya spice (a.k.a. ‘yaji’) and oil, and then grilled over charcoal. It is normally sold wrapped in old newspaper and is a firm favourite among consumers across the nation. Various spice mixes exist; this […]
Beans and Plantain Cakes

“…I always wondered why so much effort went into making mock versions of meat products. … but I’ve come to realise that there’s something fun about trying to re-appropriate long-standing dietary favourites that I once thought I couldn’t live without.” Tomi
Fennel! It’s crunchy, sweet, and I can’t get enough of it. It’s the star of this salad, and works really well with its partners: celery, green lentils, and apple cider vinegar.Emily x
Autumn. Cold winds. Rain. Hail. Even a few moments of snow yesterday between bursts of hot sunshine. Walking on the South side of the hill in the woods it is suddenly no longer autumn but the end of summer. Off with jackets, faces to the sun then round the corner into the North and winter, […]
Made using up leftover Redwood turkey roast here but you could also use a pack of ‘cheatin chicken’ or indeed leave out the meat sub altogether – it’s the veg that makes it delicious anyway!Lucy x
Coconut, Cauliflower and Chickpea Soup
The coconut and tomato in this recipe dance and twirl so delightfully through the cauliflower and chickpeas (garbanzo beans) to provide a lip-lickin’ nurturing meal. It’s simple (less is more in this case) and incredibly satiating. Enjoy…Trinity x
Cauliflower and Tahini Salad
This is a thick, creamy, nutritious dish that serves delightfully well as part of a salad buffet. Like most vegetables, cauliflower is really good for you and an essential addition to a healthy diet. The thick tahini sauce complements it perfectly as a nutrient rich, protein dense, satiating and delicious addition to the plate.Trinity x
This kale wrap is exactly the sort of thing that I might have to give me a super nutrient boost (although, not forgetting that it makes an excellent every day salad too). Trinity x
The soup was as creamy as creamy can be, and was the easiest soup to make. I followed my theory of the “one” soup recipe, which uses one of each ingredient. You can never go wrong as everything you add is one of something. My Dad even remarked that this ‘soup’ was the best tasting […]
This soup is so simple to make and you can make it while your bread is baking. You’ll have lunch on the table in no time. The best thing is, if you’re using a bread maker you can put your feet up with a cuppa while the lentils are cooking. The soup will easily feed […]
Roasted Butternut Soup with Parsley Pesto
I love butternut squash; in risotto, pasta and especially soup. It roasts beautifully and blends like a dream to create a silken soup that is perfect for the summer-to-autumn transitional season. This dish is so easy to make, you don’t even have to peel and chop the butternut squash- simply bake it whole in it’s […]
Pea and Courgette Fritters with Smoky Tomato Chutney
It’s that time of the week again; I look inside my fridge and there’s very little left! So I rustled up some store cupboard ingredients and grated a lonely looking courgette to create these scrummy pea and courgette fritters. Within ten minutes, you can also create a smokey, fiery pan-chutney with juicy ripe tomatoes, flavoursome […]
Italian Bean and Pasta Soup
For me, this is the perfect soup for Autumn Winter. It’s hearty, warming and filling. It’s also low prep and super cheap to make (even if you use quality organic ingredients!) We often serve it for Saturday lunch, but it also makes a great week day dinner, served with crusty seeded bread or warm garlic […]
Lightly Spiced Parnsip Soup
This soup is sweet, silky smooth, warming and oh so yummy! For me, this is another soup that’s perfect for Autumn/Fall. The spice I used was Garam Masala, which gives the soup a gentle hint of Indian curry. Lil’ L loves it, so hopefully other children will too.
I’ve tried many vegan French Toast recipes over the years and have gradually adapted my go-to recipe. One thing I love about vegan cooking is that without heavy eggs and butter, flavours can shine and this French Toast has a sweet flavour of vanilla and cinnamon which contrasts well with a sharp compote.
These pancakes are fantastic if you’re trying to reduce your sugar intake. A wholesome way to start the day. The touch of cinnamon also creates a warm Christmassy aroma that fills the entire house.
…packed full of all the good stuff. Sugar-free and sweetened with 100% natural apple sauce and raisins, these will give you the energy you need to start the day off, without the mid-morning sugar-induced crash.
…the perfect, cooked, gluten-free, dairy-free morning meal. It leaves me feeling vibrant, light and alive as well as pleasantly nourished and satiated. It’s ideal for occasions where regular porridge would just be too heavy. Use fair trade organic quinoa and a good quality organic coconut milk for the best results.
If you enjoy porridge then this is a lovely super-easy alternative, and one you can eat cold.
You could argue that everything is portable but I don’t want to carry multiple items to and from work every day. My solution is homemade vegan muesli, which I transport in a nifty 2 pot stacker with vegan yoghurt. When I get to work I mix the two together and voila breakfast is served! As […]
